Eik&Tid is a brewery from Norway (Oslo) which produces only traditional norwegian raw beer (sour), but with a modern twist: all beers are aged in barrels/foudres. In 2016 Amund and Bjørn started the brewery because of their love for traditional beer and their unique flavors. But they found it unimaginable to make these beers with ingredients from all over Europe. Luckily they found a farmer who had started a malthouse around the same time. Therefore Eik&Tid is now able to make beers from only local ingredients. The beers are uncooked, fermented with original kveik cultures and have a unique flavor, because of the proteins that convert to umami flavor during barrel aging. After barrel aging local fruits (and herbs) are added to the beers. Sustainability and circularity is important to the brewery and that's why the fruits, yeast as well as the spent grains are re-used. Eik & Tid is honoring the past in these modern times with a minimal carbon footprint.
