Tom Jacobs and his brother Wim believe strongly in wild fermentation and local production. Together, they create sour beers fermented with wild yeasts and bacteria, but also natural wines and dry cider made from hand-picked apples. Their beverages, produced in very limited quantities in Kortenaken in the Flemish Brabant, have quickly reached world-wide fame.
